The stone mill
A traditional stone mill consists of two granite parts. The two parts of the stone mill are slightly concave and they fit together as one whole. This is called “Fukimi”. The tea is filled in such a way that the upper part never touches the lower part.
There are also numerous furrows on top of the grinding side of the stone mill. As soon as the mill starts grinding, the tea is transported outwards, and when the leaves finally reach the outer seam they are ground into an ultra fine powder. So that the two parts of the stone mill stick together, an oak stick is placed in the center.
The advantage of using oak is that it is long lasting and has little inherent odor making it the perfect material for producing delicate Matcha.
